This bread pudding dessert is really impressive and doesn’t take a long time to make. We’ve made this bread pudding several times and everyone always raves about it. It’s great for breakfast or dessert and so delicious with a hint of orange flavor. If you need a quick and easy dessert, this is the right one! Let’s get started!
INGREDIENTS NEEDED
500g bread (You can use leftover bread)
200g sugar
80g melted butter
3 eggs beaten
1 litre full cream milk
Zest of 2 oranges
1 teaspoon of vanilla extract
2 tablespoons sultanas (You can swap sultanas for any other dried fruits like cranberries, apricot or cherries)
1-2 tablespoons of dessicated coconut
INSTRUCTIONS
Tear bread into small pieces in a large mixing bowl.
Slowly heat milk over medium-low heat, stirring occasionally until it begins to boil.
Pour hot milk into the mixing bowl and press the bread into the milk with a wooden spoon or spatula until all of the milk is absorbed.
Let the bread soak for about 20 minutes.
Next, with a fork, mash the bread. Then add sugar, vanilla essence, melted butter, beaten eggs, orange zest and sultanas. Mix gently to combine.
Grease a rectangular baking dish with butter and pour in the mixture.
Bake for about 45-50 minutes.
The pudding is done when the edges start getting a bit brown.
Finally, sprinkle 1-2 tablespoons of dessicated coconut on top of the pudding
Allow to cool completely. Then cover and transfer to the refrigerator and chill for at least 1 hour or until set.
