Hi everyone! Today We are going to share with you one of our favorite wonton soup recipes. Who wouldn’t love a nice bowl of wonton soup garnished with fresh chilli paste and spring onions. YUM! Sounds very tempting! Isn’t it? This version of homemade wontons is made from fresh ingredients and it is quick and easy to make. We have done it over and over again for years and our family loves it. Not only is it delicious, it’s also super healthy as you can add different kinds of veggies like lettuces and bok choy. INGREDIENTS NEEDED TO MAKE WONTON SOUP
80-100 wonton wrappers
INGREDIENTS NEEDED FOR WONTON FILLING
400g ground chicken. You can use chicken breast.
About 6-8 shrimps peeled, deveined and cleaned. Then roughly chop them. Don’t turn them into complete paste because small chunks will help your wontons taste yummier.
Dried squids
Dried shiitake mushrooms
About 4 pieces of dried shiitake mushrooms and 1 piece of dried squid both soaked in hot water and set aside for 15-20 minutes until they become soft. Then, finely chop them.
About 1 tablespoon of finely chopped spring onions. You can save some to garnish the soup
1 tablespoon of tapioca powder
1 tablespoon of sesame oil
½ teaspoon of salt or as desired
2 teaspoons of light soy sauce
1 teaspoon of fish sauce
1 teaspoon of ginger and garlic paste.
NOTE: You can adjust the ratio of the ingredients according to your personal taste
HOW TO MAKE THE WONTON FILLING
In a large bowl mix the ground chicken with shrimps, dried shiitake mushrooms and dried squid, spring onions, garlic and ginger paste , salt, soy sauce, sesame oil, fish sauce and tapioca powder until fully incorporated. Set aside.
WRAPPING WONTONS
Place about a teaspoon of wonton filling in the middle of the wrapper and brush the edges with water.
Fold the wrapper into a triangle and press gently to seal.
Then, brush water on one corner and bring both corners together. Press gently to seal. They look like cute little boats. Refer to our TikTok Video
Now they are ready to cook or to freeze.
NOTE: Place wrapped wontons into a container with a lid or can be covered with a cloth while you are working so that they don’t dry out.
HOW TO MAKE THE WONTON SOUP
INGREDIENTS NEEDED
1.5 litres of chicken stock
Some Boy choy or Lettuces or both.
Finely chopped spring onions
1 teaspoon of salt (or as desired)
1 tablespoon of sesame oil
½ teaspoon of grated ginger (You can omit it or reduce the amount if you think there is too much ginger)
INSTRUCTIONS
In a large pot, bring your chicken stock to a gentle boil.
Add salt, sesame oil and grated ginger (optional)
Add the wontons and stir gently so that they do not stick together.
When wontons float to the top, boil them for another 1-2 minutes. Do not overcook them.
Add the vegetables and cook 1-2 minutes more so that the veggies remain tender. Voilà!! it’s done!!
Serve garnished with spring onions. We love it accompanied with fresh ground green chillies.
