HOMEMADE WONTON SOUP

 


Hi everyone!  Today We are going to share with you one of our favorite wonton soup recipes. Who wouldn’t love a nice bowl of wonton soup garnished with fresh chilli paste and spring onions. YUM!  Sounds very tempting! Isn’t it?  This version of homemade wontons is made from fresh ingredients and it is quick and easy to make. We have done it over and over again for years and our family loves it.  Not only is it delicious, it’s also super healthy as you can add different kinds of veggies like lettuces and bok choy. INGREDIENTS NEEDED TO MAKE WONTON SOUP


  • 80-100 wonton wrappers




INGREDIENTS NEEDED FOR WONTON FILLING



  • 400g ground chicken. You can use chicken breast.

  • About 6-8 shrimps peeled, deveined and cleaned.  Then roughly chop them. Don’t turn them into complete paste because small chunks will help your wontons taste yummier.  


Dried squids


Dried shiitake mushrooms

 



  • About 4 pieces of dried shiitake mushrooms and 1 piece of dried squid both soaked in hot water and set aside for 15-20 minutes until they become soft.  Then,  finely chop them.  

  • About 1 tablespoon of finely chopped spring onions. You can save some to garnish the soup

  • 1 tablespoon of tapioca powder

  • 1 tablespoon of sesame oil

  • ½ teaspoon of salt or as desired

  • 2 teaspoons of light soy sauce

  • 1 teaspoon of fish sauce

  • 1 teaspoon of ginger and garlic paste.


NOTE: You can adjust the ratio of the ingredients according to your personal taste


HOW TO MAKE THE WONTON FILLING


  1. In a large bowl mix the ground chicken with shrimps, dried shiitake mushrooms and dried squid, spring onions, garlic and ginger paste , salt, soy sauce, sesame oil, fish sauce and tapioca powder until fully incorporated. Set aside.



WRAPPING WONTONS


  1. Place about a teaspoon of wonton filling in the middle of the wrapper and brush the edges with water.



  1. Fold the wrapper into a triangle and press gently to seal.




  1. Then, brush water on one corner and bring both corners together.  Press gently to seal.  They look like cute little boats. Refer to our TikTok Video



Now they are ready to cook or to freeze. 



NOTE:  Place wrapped wontons into a container with a lid or can be covered with a cloth while you are working so that they don’t dry out. 


HOW TO MAKE THE WONTON SOUP


INGREDIENTS NEEDED


  • 1.5 litres of chicken stock

  • Some Boy choy or Lettuces or both.

  • Finely chopped spring onions

  • 1 teaspoon of salt (or as desired)

  • 1 tablespoon of sesame oil

  • ½ teaspoon of grated ginger (You can omit it or reduce the amount if you think there is too much ginger)


INSTRUCTIONS


  1. In a large pot, bring your chicken stock to a gentle boil.

  2. Add salt, sesame oil and grated ginger (optional)

  3. Add the wontons and stir gently so that they do not stick together.

  4. When wontons float to the top, boil them for another 1-2 minutes.  Do not overcook them.

  5. Add the vegetables and cook 1-2 minutes more so that the veggies remain tender. Voilà!! it’s done!!

  6. Serve garnished with spring onions. We love it accompanied with fresh ground green chillies.

HOMEMADE LEMON CAKE

 THIS HOMEMADE LEMON CAKE TASTE EVEN BETTER THAN YOU THINK


This cake is going to make your mouth water!  We are sure you won’t be able to stop eating just one piece as it is so soft, moist, buttery and it has an attractive beautiful lemon color.  This treat is made from fresh lemon juice and zest which we love so much.  Believe us the flavor is amazing.  This might become your favorite lemon cake. Let’s get started!



FOR THIS LEMON CAKE YOU WILL NEED THE FOLLOWING INGREDIENTS 


250g self raising flour

225g icing sugar

265g unsalted butter

6 egg whites

6 egg yolks

Vanilla extract

Lemon zest from 2 lemons

Juice from 2 lemons.




STEP BY STEP INSTRUCTIONS


  1. Using a stand mixer, cream butter and icing sugar together at medium-high speed until it becomes pale and fluffy.  It can take 6-10 minutes.  Don’t forget to scrape the sides of the bowl as needed.



  1. Add egg yolks one at a time and continue beating for 5-6 minutes.  Then add vanilla extract, lemon juice and the lemon zest and keep beating until well-combined.

  2. Now, transfer batter into a large bowl and set aside.



  1. Wash the stand mixer bowl thoroughly before beating the egg whites.  Be careful to make sure your bowl is clean and dry.

  2. Then, beat egg whites to stiff peaks. 


TIPS: 


We would recommend separating egg whites when they are cold.  Then let the whites stand for about 20mins or more depending on room temperature.  At this point egg whites will beat to stiff peaks faster than cold egg whites.



  1. Now it's time to fold in the ingredients.  Let’s do it by hand so as not to overmix.  This step is very important for amazing results. Take the large bowl containing butter mixture, add in  ⅓ of the self raising flour and ⅓ of the meringue.  Fold in gently until flour and egg whites are well incorporated.  Use the cut and fold technique. But please do not overmix as this will deflate the batter and the cake will be dense.

  2. Repeat the same process twice until all the flour and egg whites are added to the batter. Again continue using the cut and fold method.  

  3. Pour batter evenly into the cake pan and tap the pan 2-3 times against the counter to remove any air incorporated into the batter.



  1. Bake for 55 minutes or until you can insert a toothpick in the centre of the cake. If it comes out clean, the cake is done. You may also notice that the edge of the cake is pulling away from the pan. This is a sign that the cake is almost done at this point. Please do not overbake your cakes as this will make them dry. The baking times are just a guideline because most ovens are different. 

  2. Allow to cool completely.


HOW TO MAKE LEMON GLAZE


INGREDIENTS NEEDED ARE


  • 2 cups icing sugar

  • 3-4 or more tablespoons of fresh lemon juice.


INSTRUCTIONS


  1. Place icing sugar in a measuring jug or medium-size bowl. Stir in 1 tablespoon of lemon juice one at a time. The glaze should be thick but pourable.  Add more sugar or lemon juice until you obtain the desired consistency.

  2. Mix well and immediately drizzle or spread on the cake. 


NOTES


WHATEVER LIQUID YOU USE, JUST ADD IT GRADUALLY TO THE SUGAR THAT IS ONE TABLESPOON AT A TIME UNTIL YOU OBTAIN THE CONSISTENCY YOU LOVE.  YOU CAN EASILY USE MILK OR HEAVY CREAM (WE PREFER HEAVY CREAM TO ADD EXTRA RICHNESS) IF YOU DON’T LIKE LEMON.

SEMOLINA PUDDING


Looking for a simple and easy-to-make dessert with minimum fuss! Then try this super simple semolina pudding.  This wonderful pudding can be topped with coconut or fruits of your choice. It is perfect for brunch or dessert. The best part is that you can make them ahead of time and easy to serve.  We will show you how😊😊




INGREDIENTS:

   

100g semolina powder (7 tablespoons)

8 tablespoons of full cream powdered milk

1 litre of water.

 8 tablespoons of sugar

10g Agar Agar powder

1 teaspoon of vanilla essence

1 teaspoon of cardamom powder (optional)

1-2 drops of red food coloring or any color of your choice.

1 cup of desiccated coconut.


INSTRUCTIONS:


  1. In a pot, add 1 litre of water followed by all the other ingredients except the food colorings. Mix well until well combined using a whisk.

  2. Cook the mixture over medium low heat by stirring constantly to prevent the mixture from burning.  Reduce heat to low if necessary. Keep stirring until the mixture thickens and boils. 


  1. Turn off heat. 

  2. Grease a dessert mould with a little oil or line the mould with parchment paper.

  3. Divide mixture into two by pouring half of the mixture into the mould.  

  4. Allow this layer to firm up in the refrigerator for about 20 minutes.

  5. Meanwhile, add a few drops of food colorings to the other half of the mixture and mix well until combined.

  6. After 20 minutes pour the coloured mixture on the non coloured one.

  7. Use the back of a spoon to smooth the surface of the pudding

  8. Sprinkle some dessicated coconut on top.

  9. Cover and refrigerate pudding until set, approximately 3 hours or overnight before slicing and serving.

TUNA SALAD

 Tuna salad is an easy dish and super simple to make. Most of all, It’s not complicated at all and it can be done with only a few simple ingredients and it’s done. You can make this salad for your next picnic! 



INGREDIENTS


  • 1 canned Tuna (around 200g)

  • Some fresh coriander

  • 2 small tomatoes

  • 1 red chilli (optional)

  • 1 medium sized red onion

  • 2 tablespoons of olive oil

  • ½ cup of corn grain

  • Juice from 1 lemon

  • Salt and pepper


INSTRUCTIONS

  1. To get started you’ll need to drain the tuna and place it in a medium sized bowl and use a fork to break any large pieces of tuna.

  2. Finely diced the red onions.

  3. Cut the tomatoes into thin slices.

  4. Finely Chopped the coriander and chilli.  Believe me, this will make this tuna recipe the best.

  5. Pour all the ingredients in the bowl. 

  6. Season with salt and pepper according to your taste. 

  7. Drizzle with olive oil and squeeze in some lemon juice and that’s it.

  8. Mix well and serve with a baguette.  Bon appétit.


You can also add sliced hard boiled eggs and some homemade mayonnaise.  It’s easy.
