NUTRITIOUS SNOW FUNGUS SOUP

 




This simple snow fungus soup with Gojiberries is very simple to make at home and very nutritious to eat.  In chinese families snow white fungus is commonly used in soups cooked for soothing purposes like nourishing the bodies, healing dry coughs and clearing heat in lungs. It is also known to improve skin complexion.  Let me show you how to make a delicious snow fungus soup with chicken. 


INGREDIENTS


2 big chicken thighs

5 Dried white Fungus

5-6 Dry Chinese Black Mushroom, Soak in hot water and slice in thin strips 

2 eggs 

2 tablespoons of Tapioca Powder mixed with 1 cup cold water.

1 tablespoon Goji Berries

Salt to taste


INSTRUCTIONS


  1. Soak white fungus for a minimum of 4 hours or till it softens. Then remove the stem on the underside of the snow fungus, cut into smaller pieces and set aside.



  1. Soak shiitake mushrooms in hot water for around 15-20 minutes and set aside.



  1. Then squeeze the mushrooms to remove as much water as possible and cut into thin strips.



  1. Next, boil 2L of water in a cooking pot.  When it boils add the chicken thighs  and reduce heat to low.  Allow to simmer for about 1 hour or till the chicken thighs are fully cooked.  Monitor the water level as you cook and add more water if necessary.  



  1. shred the chicken into small pieces. Reserved the chicken broth. 



  1. Add white fungus and shiitake mushroom to the chicken broth.  Bring to boil on medium heat for around 20 minutes 



  1. Season with salt.

  2. Then add the Goji Berries and allow to cook for 2-3 minutes more


  1. Next add the tapioca powder and you will see that the soup will thicken.

  1. In the end, drizzle in 2 beaten eggs and give a good stir. Allow to cook for 1-2 minutes and turn off heat.

  2. Garnish with coriander (optional).  I’m sorry, I do not have fresh coriander at hand! 

  3. Now it’s done!  Serve hot!
